So apparently there is a glitch that occurs randomly that turns menus and windows inside the editor black and/or wont show anything at all.

The fix is to disable MPO (multiplane overlay), you can do that by running a registry file. (link to Nvidia support site)
So if anyone is having issues on Nvidia with the Editor glitching out any having black menus or windows, try this fix (use at your own risk, but it works for me). It disables multiplane overlay. Restart may be required in order for the changes to have any effect.
